Ingredients

  • ½ cup butter
  • 1 cup sugar
  • 3 eggs
  • 4 tsp pure lemon extract
  • 2 ¼ cup flour
  • 3 tsp baking powder
  • ¼ cup milk
  • 2 ½ to 3 cups confectioner’s sugar
  • Milk (enough to make glaze slightly thicker than pourable)
  • Food coloring (optional)

Instructions

Loaf:

  1. Cream sugar and butter, add eggs and extract; beat well.
  2. Sift flour and baking powder, adding to egg mixture alternately with milk.
  3. Use large spoon to form four narrow loaves (2 per cookie sheet, lined with parchment paper).
  4. Bake at 350℉ approximately 20 minutes. Do not let the edges brown.
  5. Cool completely on wire racks.
  6. Place loaves on wax paper.
  7. Pour glaze over each loaf, covering completely.
  8. Let air dry. Cut into strips.

Glaze:

  1. Combine 2 ½ - 3 cups confectioner sugar, milk, and food coloring (optional).
  2. Stir thoroughly and pour over loaves.
