Lemon Loaf
Ingredients
- ½ cup butter
- 1 cup sugar
- 3 eggs
- 4 tsp pure lemon extract
- 2 ¼ cup flour
- 3 tsp baking powder
- ¼ cup milk
- 2 ½ to 3 cups confectioner’s sugar
- Milk (enough to make glaze slightly thicker than pourable)
- Food coloring (optional)
Instructions
Loaf:
- Cream sugar and butter, add eggs and extract; beat well.
- Sift flour and baking powder, adding to egg mixture alternately with milk.
- Use large spoon to form four narrow loaves (2 per cookie sheet, lined with parchment paper).
- Bake at 350℉ approximately 20 minutes. Do not let the edges brown.
- Cool completely on wire racks.
- Place loaves on wax paper.
- Pour glaze over each loaf, covering completely.
- Let air dry. Cut into strips.
Glaze:
- Combine 2 ½ - 3 cups confectioner sugar, milk, and food coloring (optional).
- Stir thoroughly and pour over loaves.
